French Market Soup In A Jar Ingredients

  • 1 pound dried navy beans

  • 1 pound dried pinto beans

  • 1 pound dried great Northern beans

  • 1 pound split peas

  • 1 pound yellow split peas

  • 1 pound dried black-eyed peas

  • 1 pound lentils

  • 1 pound dried baby lima beans

  • 1 pound dried lima beans

  • 1 pound dried soybeans

  • 1 pound pearl barley

  • 1 pound dried red beans

How to Make French Market Soup In A Jar

  1. In a very large container, combine navy beans, pinto beans, great Northern beans, split peas, yellow split peas, black-eyed peas, lentils, baby limas, limas, soybeans, barley and red beans; mix well. Divide evenly into 14 (1 pint) lidded jars.

  2. Attach a card to each jar with the following recipe: ADDITIONAL INGREDIENTS: 2 quarts water; 1 ham hock; 1 1/4 teaspoon salt; 1/4 teaspoon pepper; 1 (10 ounce) can diced tomatoes with green chiles; 1 large onion, chopped; 1 clove garlic, minced. TO PREPARE: Soak 2 cups French Market Bean Mix in water to cover, 8 hours or overnight. In a large soup pot, bring 2 quarts water and ham hock to a boil. Reduce heat and simmer 20 minutes. Remove ham hock. Stir in soaked beans, salt, pepper, diced tomatoes and green chiles, onion and garlic. Bring to a boil again, skimming foam off the top. Reduce heat, cover and simmer about 1 hour, until beans are tender.

  • Good basic recipe. I boiled the beans in 2 quarts of chicken broth for just under an hour. Then I added the tomatoes, onion, garlic, 6 chicken andouille sausage links (didnt have/want a ham hock), cumin, red pepper flakes and Monterey Steak Seasoning and simmered for 30 minutes. Definately something to consider for holiday giving. But I will add extra seasoning to the gift package (separated from the beans of course since you have to soak them).

  • This is fun to put together. I couldnt find dried soybeans anywhere so I simply weighed the remaining 11 bean mix and made sure I had at least 2 cups of beans in every container. I put the beans in a holiday cellophane bag with the recipe attached to the top. I had several friends comment that they havent made this soup in years and they were looking forward to trying it again. One thing I noticed that the directions omit is the fact that you need to cut up the meat off the ham hock and add it to the pot after youve simmered the beans for 1 hour.
