  • Very tasty pasta salad Used shells and macaroni and added 1/3 cup of sour cream also and 2 packs of Splenda. Im sure it would be good with some crumbled bacon, but wouldnt be as healthy. I also add a fresh chopped de-seeded jalapeno for more warmth. I think it could use maybe another can of tuna too. I would definitely make it again though.

Cream Cheese Chicken Enchiladas Reviews

  • These turned out really great. I only had one 8oz. package of cream cheese and that was plenty, honestly I think too packs would be too rich for our taste. I always use my pressure cooker for cooking the chicken when making enchiladas, so much easier and chicken turns out so moist and easily shreds. I put some of the cumin in with the chicken and used a bit less in the mixture. I did top with black olives, more green onions and cilantro. These were full of flavor and my husband said to make these again.

  • This is really creamy and really good I too only used one package of cream cheese, and I substituted jalepeno for the green chilies, but only because we like a little heat. I only used about half of the can of diced tomatoes, but that is just a personal preference as well. Very tasty...Mexican food is my "comfort food", and this definitely fills the bill

Maybe those who want to reduce the recipe to one block of cream cheese were using small chicken breasts. My chicken breasts were huge - about the size of two small breasts each.

  • I used lowfat milk, fat free sweetened condensed milk and homemade sugar free chocolate syrup. For me, there was a little too much milk but the consistancy was perfect. I will make this again but I will mess with the quanities.

  • I lightened this as best I could by using fat-free skim milk, fat-free condensed milk, and light chocolate syrup which gave me a flavorful cold coffee drink. I used very strong coffee (dont have an espresso machine), and that worked fine. Garnished with a squirt of canned whipped cream and a few mini chocolate chips. Tastes very much like the expensive coffee shop drinks at a fraction of the cost.

Mom's Chicken

A super easy chicken dish with only four ingredients, yet its yummy Sweet plum jam and tangy barbecue sauce make this chicken a real crowd pleaser.

Mom's Chicken Ingredients

  • 1 (2 to 3 pound) whole chicken, cut into pieces

  • cup barbecue sauce

  • 3 tablespoons plum jam

  • 1 (1 ounce) package dry onion soup mix

How to Make Mom's Chicken

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. In a medium bowl, combine the barbecue sauce, plum jam and onion soup mix. Place the chicken pieces in a 9x13 inch baking dish and pour mixture over the chicken, coating thoroughly.

  3. Bake at 350 degrees F (175 degrees C) for about 1 hour, or until chicken juices run clear.

  • Wonderful tangy change for a chicken dish. though I made a few subtle changes. first I used chicken breast cut into large strips, pre cooked them, didnt have plum jam, so used rasberry instead, all other ingredients were the same, but upon reading other reviews, I added 1/2 a cup of water to the sauce mix put all into 9x13 dish sealed with foil then into the oven. after 45 mins then added 1 Tbsp of cornstarch mixed with a little water into the sauce. Family went crazy over this one, including fussy daughter, DH got pouty cause daughters BF cleaned up the leftovers. Thanks Liza this ones a keeper.

My ONLY complaint: the onions in the soup mix are still hard even after the chicken is done (Not enough "liquid" to make them soft?) - so they were scraped off the chicken. Overall - very tasty and very easy.

  • Very flavorful. I doubled the sauce for a 5 lb bird, but still only used a single onion soup packet. I soaked the soup mix in a cup of warm water prior to adding it to the sauce. I also substituted plum jelly for apple jelly because its what I had convenient in the house. I used Full Circle Tangy BBQ sauce and it was marvelous. I stuffed a half of sweet onion and a few cloves of garlic in the cavity.

I did a test run on my family tonight and they liked it...so this is what Ill make for the group. I tried it with thighs, legs and breast. Used blackberry jelly that I had on hand since I couldnt find the plum jam at the market. I did add about 1/4 c of water to thin it out a tad. And I skinned some of the pieces, not all. The onion soup mix gives it a little extra umph. And about 40 minutes in I basted with the sauce it makes (keeps the onion bits from getting crispy). Ate it with mashed taters, pork and beans and broccoli. Super simple

  • I loved it. i had used about 5lbs of chicken and double everything execpt the dry onion soup mix. I also set the onion mix in 1/2 cup of water to make the onion mix softer. Then before i poured the other mixture on the chicken i added them together. I loved it and plan on useing the recipe again.

  • This was really simple and fast to put together. I used boneless breasts and Sweet Baby Rays honey barbecue sauce and some homemade sand plum jam from my father in law. I didnt have the whole packet of onion soup, what I had was already opened with a little bit gone for another recipe. This had a nice flavor and was sort of barbecue but not really.   • I first made this recipe using chicken breasts, and I thought it was a good recipe especially since it was so simple. Last night, I made this recipe using 1/2 inch pork chops in place of chicken. The sauce was an excellent flavor for pork chops. This will definitely be a "go to" recipe for me. I seasoned the pork chops with a generous dash of salt and pepper and then browned them in the skillet. I changed the recipe by doubling the ingredients for the sauce except for the onion soup. I mixed the onion soup with 1/2 cup water and let it sit for about 20 minutes so that the onions would be plump and not dry. I will be proud to use this recipe with company or just for our everyday meals.

  • This is actually a fairly flexible process. To be honest the really, really good quality matcha is 100% worth it, but pricey, so I dont use this much Matcha in the drink. I drink 16oz with 1tsp matcha powder, and its better than the Starbucks version. After a while Soy leaves me feeling less than great, so I use rice milk or Ripple milk. Rice milk is a little thin. For unsweetened, dairy free milk I use less than a 1/4oz honey by weight. I warm it gently on the stove and once the milk is the temp I want to drink I whisk the matcha in. A really good quality matcha powder wont clump. I use Akira Matcha from Amazon. I usually also use a dash of Vanilla extract. You could also sweeten it with raspberry simple syrup - its a really unique treat. I do that once on a while.

New Mexico Green Chile Stew

This is my slow cooker version of a green chile stew from New Mexico. It is great to serve with tortillas, tortilla chips, green onions, and sour cream.

New Mexico Green Chile Stew Ingredients

  • 1 pound beef tenderloin, cubed

  • 1 pound boneless pork loin, cubed

  • cup masa harina

  • 1 tablespoon olive oil

  • 1 red onion, chopped

  • 3 cups chopped fresh tomatoes

  • 2 cups diced green chile peppers

  • 2 cups low-sodium beef broth

  • 1 tablespoon ground cumin

  • 1 large potato, cubed

  • 3 cloves garlic, minced

  • 2 teaspoons chopped fresh oregano

  • 2 teaspoons chopped fresh cilantro

  • 1 dash cayenne pepper

  • salt to taste

  • ground white pepper to taste

How to Make New Mexico Green Chile Stew

  1. Place the beef tenderloin cubes, pork loin cubes, and masa harina in a plastic bag, and shake to coat the meat. Heat the olive oil in a large skillet over medium-high heat, and cook and stir the meat cubes until evenly browned, about 10 minutes.

  2. Place the meat, red onion, tomatoes, green chile peppers, beef broth, cumin, potato, garlic, oregano, cilantro, cayenne pepper, salt and white pepper in a slow cooker. Cook on Low until the meat is tender, about 8 hours.

  • This is a STEW Why would you want to use an expensive cut of meat like a beef tenderloin in a crock pot. OMG I live in Albuquerque, born and raised and any lesser cut would work just fine We never put beef in our Green Chile Stew just pork Do use the masa, it adds depth to the stew and remember if you are not from around this part of the country that if you have fresh green chili that you need to roast it first. There are several ways to do it: You can put it on a pan and broil it, turning it when each side gets black and blistered. You can put it on your outside grill, or my preferred method for just a few chilis at a time, I roast them on the top of my gas range. After blistering the skin, put them into a large resealable bag and let them steam for about 15 minutes then peel off the charred outer skin. To tell if your chili is hot, look at the stem end. The more points it has, the hotter it is. If you dont want you chili hot remove the stems and seeds. Enjoy

  • We loved this recipe and although we did change some things, we feel it would be worth 5 stars as written. What I did differently was, I left out the beef and doubled the pork (we didnt have any beef on hand), I substituted whole wheat flour for the masa harina, used sweet yellow onions instead of red (my husbands preference), and coriander instead of cilantro. One thing I did also was substitute a rutabega for the potato, in order to cut the carbohydrate count considerably (we try to watch our starches when we can). This was so wonderful, and even though it may seem like a lot of prep at first glance, was quite easy. We served it to guests on Halloween and they all loved it

Stick with pork, dont waste beef tenderloin in this, replace the cumin with chile powder or ancho chile powder. Cumin has NO place in authentic NM food. Also, to liven up my meat before adding it to the liquid, I heavily seasoned the corn meal before tossing the meat in it, so it brought out some really good flavor.

I added it at the end of the cooking run for the last hour. Pork tenderloin is much more tender naturally than beef stew meat, so I didnt want to overcook it in the slow cooker for hour and hours.

  • Native New Mexican here, this is as authentic as it gets. I make a fair number of substitutions to this: canned tomatoes if fresh arent in my fridge at the moment, venison (if stew meat I try to cook it for 8+ hours in a slow cooker on low, if burger meat it only needs 2 hours of simmering on the stove top), Ive also tried adding carrots. Every time this comes out great, despite my various substitutions. The masa harina (Ive substituted corn meal) gives it a heartier taste so dont skip that Excellent recipe.

  • This is a great recipe. The flavor of the stew is really warm and comforting. I made similar changes to the recipe that Amy used. I doubled up on the pork shoulder, and did not add any beef. We are on a low carb diet, so I used flax meal instead of masa harina. I used chicken stock instead of beef stock, and diced canned tomatoes, drained vs. fresh. Next time, I will try rutabaga as a potato substitute.

  • I made this recipe as written with the exception of using a cheaper cut of beef. I thought the recipe had a lot of flavor and will definitely make this again.

Next time I will follow it exactly because I think it will be better. Used it more as a gage as to how much ingredients for proportions.   • I have made this stew twice once with pork, once with chicken (I know its not traditional -but this recipe is so simple and versatile) -I love it Its so easy and satisfying ; also healthy. Highly recommended :)
